Allegheny Distilling is an urban distillery located in the historic Strip District of Pittsburgh and maker of Maggie’s Farm Rum, the first commercially-available Pennsylvania-made craft rum since Prohibition. Maggie’s Farm is more about what it isn’t, a corporate entity where marketing gimmicks and bottom lines trump taste and quality. Maggie’s Farm is an independent craft distillery founded without the support of banks, venture capitalists, and rich relatives.

All of our rums are distilled from turbinado, a raw cane, rather than molasses and pot-distilled for body and flavor on 100% copper Spanish-made stills. We produce our rums using Caribbean-derived yeasts with long fermentation times for higher ester production. Even our white rums are lightly aged up to six months for additional smoothness and ester development. All of our aged rums are now at minimum of 2-3 years old at time of bottling and aged in neutral rum casks, same as most Caribbean distillers do, to preserve the flavors and aromas produced by secondary and tertiary esterification.

All Maggie’s Farm rums and liqueurs are naturally flavored with fresh, whole ingredients. Whether its orange zest, vanilla beans, and cinnamon sticks in our spiced rum, fresh-ground and cold-brewed coffee beans in our coffee liqueur, or fresh-grated lime zest and whole ginger in our falernum liqueur, no artificial flavors or extracts are ever used.

Queen’s Share Rum is our award-winning reserve spirit made exclusively from the tail runnings of our normal cane rum distillations. Being heavier than alcohol, the flavor and aroma compounds boil off the still in a higher concentration at the end of the distillation cycle. We keep these tail runnings, about 10% of our production, from our normal rums and re-distill them on their own. This results in a more flavorful and complex spirit sold at cask strength both unaged and aged over two years in ex-rum, -rye, -bourbon, and -sherry casks.

And all of our stills and manufacturing processes are on display right behind the cocktail bar in our distillery’s tasting room located in Pittsburgh’s industrial Strip District, so you know exactly where your rums are coming from.
