About Our Spirits

Distillation & Production

All of our rums are distilled from Louisiana turbinado, a raw cane, rather than molasses, and pot-distilled for body and flavor. We use an 800-gallon pot still with a custom-designed gooseneck/downward lyne arm, similar in style to Jamaican rum and Scotch whisky stills, to maximize the capture of the fermentation’s natural flavor and aroma compounds.

We produce our rums using Caribbean-derived yeasts with longer fermentation times for higher ester production.

Our Rums

The most basic rum type we produce is white rum, or silver rum. This is unadulterated, unaged rum with no additives and bottled at 80 proof. Buy Maggie's Farm White Rum.

Our spiced rum is the same base as our white rum, but flavored with spices. We don’t use any flavor extracts. Our spiced rum is made by adding eight different ingredients to a high-proof rum to extract the natural flavors from the whole spices and fruit. Over five days, the rum is soaked in a blend of hand-grated orange zest, whole Tahitian vanilla beans, cinnamon sticks, nutmeg, allspice, cloves, cardamom pods, and star anise. The spices are strained out, then the rum goes through a fine filtration process to remove any remaining solids before bottling. Each of our pure, single-aged rums is at least 3-5 years old and aged in various casks, including ex-bourbon, rye, sherry, and rum casks, for a variety of finishes, geared as sipping rums, similar to modern whiskey.

Single Barrel is our pure aged rum bottled from one single barrel without blending in a former rye whiskey cask. These are picked from our aging stock to be only our best releases and each barrel offers a slightly different character. These are very limited in availability, as we typically only bottle 2-3 barrels at one time per year, around our anniversary of Black Friday. Sherry Cask Rums are pure and aged, but blended from barrels that have aged 3-4 years. Once blended, the rums are finished in ex-sherry wine barrels (Oloroso style from Jerez, Spain) for a few months. The natural vanilla of the rum plays well with the nutty, herbaceous, and dark fruitiness picked up from the sherry casks. In 2015 we began producing lines of blended rums. Our “50/50” line allows us to release a “dark” rum with a traditional Caribbean character and quicker turnaround times by equally blending our own rum with imported aged rum from Central America. This availability lets us maintain proper aging of our own 100% single rums without feeling rushed to release them until we feel they’ve reached proper aging after multiple years. Our Hidden Harbor Overproof White Rum is a collaboration with the folks at Hidden Harbor tiki bar in Squirrel Hill. The recipe uses 80% Maggie’s Farm white rum, but also rums we were able to source from other countries. Jamaican rum makes up 10%, while rums from Trinidad, Barbados, Guyana, and Martinique make up the remaining 10%. It’s bottled and 100 proof and was designed by Hidden Harbor to be the ultimate daiquiri rum and have the complexity and character of each of the other country’s natural styles. All of our rums are bottled with no sugar additions for a naturally dry product.

Our Liqueurs

All of our flavored liqueurs are produced with 100% all-natural ingredients. No artificial flavor extracts are ever used.

Falernum is considered a spiced rum liqueur popular as an ingredient in tiki cocktails. The prevailing style, one infused with lime and ginger, originated from Barbados. This is our custom recipe in the Barbados style using real ingredients, including fresh-hand-grated lime zest, fresh-ground ginger, and toasted clove. We add these ingredients to a tank of high-proof rum to extract the natural flavors. We then strain out the solids and lower the proof with water and sugar to sweeten it. It’s bottled at 50proof in black bottles to prevent UV sunlight damage. With flavor being the most important factor, we leave it unfiltered. Buy Maggie's Farm Falernum Liqueur.

Our coffee liqueur is made with real coffee. It’s a custom blend we designed and source locally from Commonplace Roasters. Commonplace delivers coffee beans freshly roasted that we grind to make a large batch of cold brew concentrate. After a 24-hour cold brew, we then dilute the concentrate with our white rum, brown sugar, and a vanilla extract made in-house from whole
vanilla beans. We bottle this at 42proof in solid black bottles to prevent UV sunlight damage. Seasonally, we also offer pumpkin spice coffee liqueur and also peppermint coffee liqueur. *This is made from concentrated coffee, so it does contain high amounts of caffeine equivalent to espresso. Our Ready to Drink Cocktails (RTDs) & Seltzer

Maggie’s Farm Rum Old Fashioned is a unique take on the classic American cocktail. Our rum is aged in rye whiskey barrels with American oak cubes to capture the distinctive flavors and aromas that barrel-aging offers. The aged rum is then blended with Louisiana turbinado sugar and aromatic bitters in the same proportions as the traditional old fashioned cocktail recipe.
